Sometimes the hubster and I forget to grocery shopping. When this happens our go-to meal is to take whatever we can find in the fridge, throw it in our wok and have a food party for dinner. It’s easy, delicious and healthy! Depending on what we have depends on what goes in it so feel free to get creative.
Small amount of tofu cubed
Coconut oil
1 bag frozen organic broccoli florets
I cup-ish shiitake mushrooms sliced
1 carrot sliced
1 onion sliced and diced
2 cloves garlic chopped
Organic soy sauce
Old white wine or white wine vinegar
Teeny bit of chili oil
1 cup cooked wild or brown rice
2 eggs
Directions
Melt coconut oil in a wok on medium high
Sauté onion, garlic, tofu and carrots for about 5 minutes
Dance to rock and roll music
Add in the rest of the veggies until slightly cooked or not frozen
Dance a little more
Sprinkle soy sauce and white wine
Add in rice and stir frequently
Add more soy sauce if needed
Sing, “I wanna wok and roll all night and party everyday” at the top of your lungs
Crack in eggs and stir vigorously until they fully fry
Add in chili oil if you like heat. Be careful. That sh*t is hot!
Turn the lights down, light some candles, put the stir fry in a bowl, sit down at the table, say what you’re grateful for and then dig in!
