Ingredients:
2 teaspoons coconut oil (or other high heat oil like avocado)
1/2 onion chopped
2 cloves garlic, minced
1 cup marinated artichoke hearts cut into small pieces
1/2 cup frozen green peas
1 cup broccoli
1 cup mushrooms chopped (not the magic kind haha) (or maybe the magic kind if you want things to get really interesting otherwise white or mini portabellas are good)
1 cup spinach
1 handful of green or kalamata olives
1/2 cup frozen green peas
14 -ounce can diced tomatoes
1/2 cup sliced carrots
1 teaspoon turmeric
2 bay leaves
2 cups cooked brown or wild rice
1/2 cup organic vegetable broth
1/4 cup chopped fresh cilantro
Sea salt and black pepper
Directions:
Over medium high heat, heat oil in a large pan or skillet
Add onion and garlic and cook about 5 minutes and dance to 75 and Sunny by Ryan Monbleau Band
Add artichokes, carrots, asparagus, peas, tomatoes, turmeric, olives, spinach, carrots, mushrooms and bay leaves
Bring to a simmer and cook 5 minutes while dancing to Sparkle by Phish
Add rice and broth and cook for 5 minutes until liquid is absorbed. While you are waiting dance to Just Dance by David Bowie
Remove from heat, remove bay leaves and stir in cilantro. Season to taste with salt and black pepper.
Plate the meal, sit down, take a breath, express what you are grateful for in the moment and then dig in!
