Sometimes after “work” time I like to take yoga, watch the sunset, hang out with friends, get some tea, go for a walk or go grocery shopping. On those days when I get home I like to make something easy that doesn’t take a lot of time. I also like to pretend that I’m really good at gangsta rap.
Ingredients:
Large tortilla/wrap
Handful of cooking greens aka spinach, chard and/or kale
Handful of black beans (I used the canned kind. Rinsed those mother f’n beans and stored the extra for a gangsta egg scramble the next morning)
Couple jalepenos
2 tbsp pesto
Sriracha to taste (if you’re truly a gangsta like me then that means a lot!)
Directions
Put on your favorite gangsta rap songs (Tupac, Eazy-E, Biggie Smalls, Ice Cube, Eminem, 50Cent, Dr.Dre, Snoop Dogg or Naz)
Lay out tortilla/wrap while lip syncing and pretending you’re in the video
Place all ingredients inside
Rap that sh*t up
If you have a griddle entire wrap on it over high heat until golden brown. Flip.
If you don’t have a griddle, put wrap in a large sauce pan over medium heat until golden brown. Flip.
Put that epic gangsta goodness on a plate.
Turn town the tunes and express what you’re mother f’n grateful for that day. Like for instance if that day you didn’t even have to use your A.K. I got to say it was a good day.
