I love a good salad and this one is perfect for this time of year when everything is poppin’. When the days are lighter and brighter and the temps start rising I crave green greens and more greens. Here’s a recipe that is guaranteed to put a little spring in your step. Yum!
Spring In Your Step Salad
Serves 4 Ingredients:
- 1 bunch asparagus (just the tender parts) cut into 1 inch pieces
- 1/2 cup frozen peas thawed
- A few handfuls of salad greens
- 2 thinly sliced radishes
- 1 avocado cut into cubes
- 1/4 cup chopped walnuts
- 1/2 cup rinsed canned chick peas
- Optional fresh herbs (basil, mint, chives)
- Salt and pepper to taste
Dressing
- 1/4 cup fresh basil
- 1 garlic clove
- 1 tbsp lemon juice with a 1/2 tsp zest
- 1 tbsp white wine vinegar
- 2 tbsp extra virgin olive oil
- dash of salt
Instructions
Put on this song that always puts a spring in my step
- In a mixing bowl put in the asparagus, olive oil, salt, and pepper. Toss. Airfry at 400 for 8 minutes.
- Transfer into a bowl and add the peas
- Put in the freezer to cool it down while making the dressing
- Make the dressing. In a food processor, pulse together the herbs, garlic, lemon juice, zest, vinegar, olive oil, and salt.
- Assemble the salad
- Start with greens. Then add the asparagus and peas. Radishes, avocado, walnuts, chick peas and herbs are next.
- Drizzle with the dressing
- Season with more salt and pepper if desired
