I love my kitchen with it’s beautiful bright blue cabinets, but that doesn’t mean that I enjoy spending a lot of time cooking in it. Get In>Dance>Make Food>Clean Up>Get Out is my motto. That’s why I love this Curry in a Hurry recipe because it’s delicious, nutritious, and quick.
Curry in a Hurry
Servings 4 Ingredients
- 1 tbsp coconut oil
- 1 cup chopped onion
- 2 minced garlic gloves
- 1 tsp grated fresh ginger
- 3 tbsp red curry paste
- 2 cups broccoli
- 2 cups zucchini
- 1 can full fat unsweetened coconut milk
- 4 cups fresh spinach
- 1 cup mushrooms
- 2 cups cooked basmati rice
- optional handful of cilantro or basil
Directions
- Put on music and dance!
- Heat the coconut oil in a large saucepan over medium heat. Add the onions an garlic and cook until browned. 5ish minutes. Reduce heat to low.
- Add all the veggies except for the spinach to the pot. Cook for about 5 minutes. Add the coconut milk and curry paste. Cover and simmer for 20 minutes.
- Add the spinach.
- Serve the curry over rice and throw some cilantro and basil on top.
- Give yourself a pat on the back for making something easy and yummy!
