I texted my friend Kate and said, “Come over. I’m making epic brunch.” She was over in a flash and what I served her didn’t disappoint. In fact, it blew her mind with how good it was. Being the kind of person that likes to share information with others, I’m going to share this recipe with you. I forgot to take a photo so here’s a video of my husband and friend Kate enjoying their Epic Grits Bowl.
The Epic Grits Bowl
Serves 3
Ingredients:
- 1 cup grits
- 3 cups water
- 1 tbsp minced garlic
- 1 avocado sliced
- High heat oil such as avocado or coconut
- 3 handfuls of fresh spinach
- 6 crimini mushrooms sliced
- 1/2 sweet onion chopped
- Small amount of balsamic dressing
- Hot sauce of your choice (Check out Scarlet Fire)
- Salt and pepper to taste
- 6 eggs prepared to your liking
Directions:
- Put on this playlist
- Bring water with minced garlic in it to a boil in a pot
- Slowly add in grits whisking as you go to avoid clumps
- Cook uncovered for 20 minutes stirring frequently
- In the meantime dance
- In a frying pan add oil and heat to medium high
- Cook onions and mushrooms for about 5 minutes
- Add in spinach for 1-2 additional minutes
- Place aside
- Add a little more oil to the pan
- Cook the eggs to your liking
- When the grits are done transfer them into three wide bowls
- Divide the veggies into the three bowls
- Add avocados
- Place eggs on top
- Drizzle with balsamic and hot sauce
- Add salt and pepper to taste
- Enjoy
